SC3 — Cooking, Cooling & Reheating

Record all cooking, cooling and reheating of high-risk food. Core temp must reach ≥75°C when cooking.

SC4 — Hot Hold / Display

For food held hot for more than 2 hours. Temperature must stay ≥63°C throughout. Check at 2hr, 4hr and 6hr intervals.

SC5 — Hygiene Inspection

Manager / proprietor inspection. Carry out weekly, fortnightly or monthly as appropriate. Record any actions taken.

SC7 — Fitness to Work

Every member of food-handling staff must complete this before each shift. If any answer is YES, do not handle food — inform manager immediately.
